This keeps outside contaminants from getting in, but allows CO2 created in the fermenting process to escape. No more "burping" jars daily or scooping off surface molds; simply add water as it evaporates to keep the seal intact. The set is easy to use and comes complete with lid and weights to keep vegetables under the brine. Built in handles help with carrying and moving.
